About Jeani Hunt-Gibbon, MS, RD, CDN
I am a Registered Dietitian, certified in the state of Washington, and I hold a Master’s degree in Nutritional Sciences from the University of Washington . I also happens to have years of experience in food, wine and hospitality marketing and PR. I have expertise in the areas of women’s health nutrition, fertility and nutrition, nutrition for chronic disease and more! In addition to offering personalized nutrition recommendations and plans through VeggieLush Nutrition, I work part-time as an inpatient dietitian at a local hospital. When I’m not talking about, thinking about or eating food, you can find me in the air, practicing and teaching aerial circus arts or walking my dog Raven.
My true love affair with food began when I studied abroad in France. There, I was lucky enough to be paired with roommates who taught me a new philosophy of cooking. We would go to the farmers market and pick up fruits and vegetables, take them home, cut them up and pair them with household staples, add in some spices and perhaps a glass of red wine and voila – a lovely, healthful meal was prepared. It was a magical process to me, one that I have carried throughout my life and has shaped my thinking on food. Most importantly, it showed me that nutritious food can be a joyful experience. Since then, I have learned to incorporate intuitive eating practices and evidenced based nutrition practices with that joie de vivre I experienced, and my goal is to bring that philosophy of eating to you!
